In a recent review of Knysna Hollow Restaurant I raved about their blue cheese and chive mash that came with the rib-eye steak. It may sound like a silly little dish to rave about, but it really added a great twist to the meal and I even went as far as saying how “I’d love to find a recipe for it so that I can tantalise my friends at a dinner party one day.” Knysna Hollow responded by asking Chef Grant Ludski to share the recipe with us. And I’m so grateful, because this delicious side-dish-with-a-twist will impress your friends and perfectly accompany that braai vleis you’ll be serving up on National Braai Day!
Serves 4
Ingredients
- 1kg potatoes
- a good pinch of fine salt
- 125g unsalted butter diced
- 150ml hot full cream milk
- sea salt
- 1/4 teaspoon grated nutmeg(optional)
- 125g blue cheese
- one bunch of finely chopped chives
Method
Place peeled and diced potato into a pot of cold water, add fine salt, and bring to the boil. Simmer for about 20 minutes until soft. Drain well.
Place the potatoes back in the pot and let them steam over a low heat for a few minutes.
Mash the potatoes and then work in the butter one block at time with a wooden spoon. Beat in hot milk to give the mash a soft consistency that drops lightly. Add nutmeg.
Add crumbled blue cheese and chives and mix through well. Season carefully and serve.
